These are lovely basic vanilla biscuits. I have added lemon zest to give them a citrus kick but you can add less if you like. They’re quick and lovely to enjoy with a cup of tea – and no doubt your monkeys will like them too!
Time needed: 20 minutes for preparation, 15 minutes for baking
Ingredients: (makes 30)
200g butter, softened
½ tsp vanilla extract
1 cup (160g) icing sugar
1¾ cups (260g) plain flour
½ tsp bicarb of soda
2 small lemons, zested (use less to make the biscuits less citrusy)
- Preheat oven to 170°C/150°C fan-forced. Grease oven trays and line with baking paper.
- Beat butter, vanilla extract, sifted icing sugar and egg in a small bowl with electric mixer until light and fluffy. Transfer mixture to medium bowl, add the lemon zest and then stir in sifted flour and soda, in two batches.
- Roll level tablespoons of dough into balls. Place about 3cm apart on oven trays.
- Bake biscuits for about 15 minutes. Cool on trays.
