This cookie recipe was included in our July ‘Night-time’ boxes. We also included a star-shaped cookie cutter in each box. This is a great kids recipe for little monkeys to learn how to measure, mix, safe oven use as well as using their brand new cookie cutter.

Time needed: 40 minutes
¾ cup caster sugar
2 teaspoons vanilla extract
1 egg yolk
2¼ cups plain flour sifted
sugar crystals for sprinkling
1. Preheat oven to 180°C. Place the butter and sugar in an electric mixer and get your monkeys to beat until pale and creamy. Add the vanilla and egg yolk and beat well to combine. Stir in the flour until smooth dough forms. Divide the dough into 4 portions and wrap each portion in plastic wrap. Place in the refrigerator for 15 minutes or until the dough is firm.
2. Roll out each portion of dough between 2 sheets of non-stick baking paper until 3mm thick. Remove the baking paper and use your star-shaped cookie cutter to make each star. Sprinkle with sugar and bake for 8 minutes or until the cookies are light golden. Yum!
